Happy Monday!

This weekend actually went by pretty slowly for me which was nice for a change.  Two of my roommates were gone for the weekend so 3 of us were left to just chill and hang out which was much needed!

Friday night the 3 of us went out to Red Lobster for dinner (aka my favorite restaurant ever!).  The food was awesome as always.  I got the shrimp tacos with a side of broccoli.  And of course the cheddar bay biscuits were devoured within seconds of our waiter placing them on the table. Holy cow are those good.


After a fabulous dinner we made a quick stop at Target where I discovered something I had been wanting to try for awhile now….Pb&J trail mix!


Oh. my. god. This stuff is dangerous I’m telling ya.  As you can tell I’ve pretty much devoured the entire bag. Whoops.  I can already tell this is going to have to be a special occasion thing or else I will literally go through a bag a week!

Saturday I slept in a bit then headed to the gym early to get my workout done with for the day.  I was actually there for over an hour. I just did a random hodgepodge of cardio on the treadmill, the stairmaster, and a bit on the bike.  Then I did weights, mostly legs and abs, for about 20 minutes.

After that I came back and studied for the rest of the afternoon.  Then when my one roommate, the one I share a room with, came back from the conference thing she was at, the 3 of us watched………..


LES MIS!!!! Ohhhh my goodness let me just say I feel horrible for ever saying anything bad about this movie.  I honestly had no interest in seeing it as my roommate kept singing “I Dreamed a Dream” months before it came out therefore I was kinda sick of it. lol But holy cow, I never would have waited so long had I known how incredible it was.  I was literally sobbing at the end.  Eyeliner running down my face and all. (Which my lovely roommate decided to take a picture of haha).

But another reason I fell in love with it so much was because this amazingly hot guy was in it…


His name is Fra (short for Francis I learned today lol) Fee. He’s Irish and absolutely adorable. He played Courfeyrac in the movie which was a pretty small part, but once I saw him I could not get enough!!! Really I mean he could not be any cuter.

Anyways, the almost 3 hours it took to watch that movie was totally worth it!

Sunday I slept in again…almost till noon. Whoops.  And I just studied again for a math test that I had today.  Then we had our weekly family Sunday night dinner where we had breakfast for dinner, which is always good in my book! And then it started snowing. It never amounts to much at my school since we’re pretty close to the water but it was still pretty cool.

And that was my weekend.  Pretty relaxing and uneventful but it was still great! Now I’m hoping this week flies by because I’m going home Friday to celebrate a birthday….and not just any birthday- my 20th birthday! 🙂



Eating healthy in college

When I went off to college, eating healthy wasn’t really a priority of mine.  But once I found health and fitness blogs and started working out regularly, I discovered that eating healthy was another thing I could try and do to feel healthier.  At first I loved the food at my school, it was different and coming from a family that rarely cooks, it was a nice change.

However that soon ended!  Since I go to a fairly small school, about 5,000 students,  we only have 2 small dining halls.  They rotate the food and rarely have anything new.  Needless to say, I got tired of the food very quickly.  We actually have a small section in our dining halls called the “healthy haven” however don’t let that name fool you.

Half the time they still have fattening and over seasoned dishes and vegetables that are just as unappealing as the rest of the food offered.  Especially the vegan stuff they have sometimes.  Like last week, the vegan selection for dinner one night was “Vegan beef and potato nacho casserole”……Umm ew!!! I’m sorry but I doubt any person trying to eat a vegan diet would want to eat anything like that.

Ok enough ranting about my dining hall 🙂 Anyways, there are some occasional good things I find in our dining hall so I’ll share what my typical meals are


Since I have the 10 meal plan, I almost always make my own breakfast.  Usually I’ll have a bowl of oatmeal (Quaker weight control, I know instant is not so good for you but this kind has 7g of protein and only 1g of sugar!) with a spoonful of peanut butter and banana slices.  My other favorite is 1 1/2 toaster waffles with peanut butter and banana. Notice a trend with my breakfast? 😉


I wonder how many boxes of these I’ve gone through…eh maybe I don’t want to know!


I have whole wheat sandwich thins in my room so usually for lunch everyday I’ll have a turkey sandwich on one of those with spinach, mustard, and occasionally cheese too.  I’ll also have an egg white sandwich if I am tired of turkey that day or a good ole pb&j is always good in my book 🙂 My sides are usually some baby carrots and a handful of kashi crackers or chips.


Dinner is where I usually rely on the dining hall.  The dining halls tend to have better options for lunch so I’ll get whatever’s best that day and put it in the fridge for dinner.  Grilled chicken or salmon are pretty much the only things I’ll get for dinner.  At least one of the dining halls usually has grilled chicken but I get super excited on the days they have salmon because it’s SO good.  Of course in addition to chicken/salmon I’ll get whatever steamed veggies they have too.

I also always hit the salad bar in the dining halls pretty hard.  I’ll get spinach for my sandwiches, cucumbers, baby carrots, peppers, corn, etc. to add into whatever else I think of to make for a meal.  And another plus in my dining hall is the unlimited fruit they have.  I’ve been known to take an entire to-go box just full of bananas. 😉 

Ugh if only our salad bar was like the entire hot bar area at Whole Foods!! I would never go hungry again.


Other than that, pretty much everything else in the dining hall is fried or as I like to call it “guy food”. Blegh.  So it is kinda tough eating healthy at my school but I think after almost 2 years here I’ve finally figured out a good system for myself.

Spring break

Sunday marked my last day of spring break so I thought I’d share the exciting (haha yeah right) things I did during my break!

The first thing I was greeted with when I got home was this…isn’t my Dad the best?!


I pretty much just spent the rest of that night relaxing and cuddling with my two dogs, Maisy and Copper, who I’d missed a lot! The next day my Dad and I went to go look at some new cars for me.  I mentioned in my first post that I like Volkswagens, well that’s kind of an understatement. haha I LOVE them.  My Dad is a total car guy ( he’s owned over 100 so far!) but his favorites are old VW’s.  I’ve grown up with Volkswagens my whole life, so naturally my first car was a silver new beetle.  It’s a 98, which was the first year they came out, and it’s had its fair share of problems so that’s why we were looking for a new one.  Unfortunately all the ones we found that weekend weren’t really great deals so the search continued!

One successful thing though was that my Dad and I did stop at this Asian market that was near a dealership we went to.  It’s called Lotte Plaza and is so amazing.  They have samples of delicious food everywhere, and even though all of the stuff is written in Chinese it’s still so much fun to look at! And I was SUPER excited when I saw they had bubble tea in the restaurant part of the store! I had always wanted to try it before!! I got the Pina Colada flavor and it was amazing.


On Monday my Dad and I went into Maryland to pick up some cabinets my dad had bought since he’s redoing our kitchen right now.  There was a Whole Foods nearby and since I am in love with Whole Foods I talked my Dad into stopping!  I thought the produce section was breathtaking, haha!  Just look at that rainbow of peppers! Yum!


On Wednesday we had a huge snowstorm hit but I unfortunately had to work that day and was called in early.  I work at the ever popular Starbucks! Yep I’m a barista 🙂 It’s a really hard job, especially at the one I work at since it’s the only one in the western part of my county so we’re always slammed.  But it is a good paying job and most of the people I work with are great so it’s not too horrible.  I also worked all day Thursday too.

After working all day Thursday my first order of business when I got home was to take a nap with these two.  Napping with two warm dogs. To me there is no better thing 🙂

Saturday  morning I was up early for bootcamp.  My mother and I go to a local dance studio for fitness classes about 2-3 times a week.  The bootcamp however is my favorite.  Our instructor is seriously the best fitness instructor I’ve ever had.  She’s a former fitness model and is the sweetest person in the world.  Her class always leaves me sore for at least 2 days afterward!  This past Saturday we used those fold out gym mats as elevation and holy cow was it tough! I thought for sure my legs would be sore from all the jumping and balancing we did on them but surprisingly my upper back has been sore from the weights we used.

My parents and I went out to Red Lobster for dinner my last night I was home since it’s my favorite restaurant!  We all stuffed ourselves with a little too much lobster (and Cheddar Bay Biscuits of course) but it was sooo good.  I was actually a little nervous after eating there since the last time I had eaten at a Red Lobster I ended up in the ER- but that’s a story for another day! 😉

Sunday morning I woke up early and packed up all my stuff and made some Kodiak Cakes for breakfast.  My parents and I went to this cool new coffee shop called Hypnocoffee where they slowly make all their coffee.  It was interesting, not the best, but maybe I’m too used to the stuff we make at Starbucks!

So that was pretty much all I did over my spring break.  It was actually pretty busy but I still got to relax and cuddle with my dogs which was the best part 🙂 This week has been dragging but hey we’re halfway there thank goodness.

Welcome to my blog! I always feel like the first post is kinda awkward…or is that just me?! haha Anyways, my name is Clarice and I’m a soon to be 20 year old! I’m currently a sophomore in college majoring in Business Management.

My main passion is Disney. I’m a certified Disney freak! Now I’ve always loved Disney but my junior year of high school I went to Disney World with one of my best friends and my love for Disney multiplied crazily! After seeing the magic and happiness created there on a daily basis, I decided that I wanted to work at Disney World after I graduate college.  I plan on doing the Disney College Program in the next year or so too!

Besides Disney, my other reason for creating this blog is to share my love of all things fitness and health.  I did cheerleading for 10 years all the way to my senior year of high school but never really worked out consistently or focused on eating healthy.  That all changed when I started college my freshman year! Having more options for healthy food from the dining hall and access to a pretty sweet gym lead me to becoming a fitness junkie.  Around that time I also discovered healthy lifestyle blogs too and became hooked ever since! I’ve completely changed the way I eat and exercise on a regular basis, I’ve never felt better!

Besides Disney and fitness I have a lot of varied interests as well. I won’t go into detail but my other passions also include Volkswagens, Aerosmith, the NY Giants, shopping, photography, amusement parks, and fashion.  As you can tell I’m a girly girl yet total tomboy at the same time!


Also, the meaning behind my blog name is a part of my favorite Walt Disney quote “All our dreams can come true if we have the courage to pursue them”  It’s my favorite quote of his as I look up to Walt Disney so much.  He was such an inspiring man who always strived for more all while creating magic that would last a lifetime.  I only hope I can create a fraction of the greatness he did when I work for his company soon!
